
Ayran Process Tanks
Ayran process tanks are hygienic and durable tanks designed for ayran production in the dairy industry. These tanks are used in various processing stages, such as mixing, fermenting, storing, and cooling ayran. They are made of stainless steel (typically AISI 304 or AISI 316) and manufactured in compliance with food safety standards (FDA, EHEDG, 3-A).
Material:
Stainless steel (AISI 304 or AISI 316L) inner surface; exterior may be stainless or insulated.
Surface finish: Ra ≤ 0.8 µm (smooth surface prevents bacterial adhesion).
Capacity:
Available in models ranging from 100 liters to 50,000 liters.
Industrial facilities typically prefer tanks between 5,000 – 20,000 liters.
Design Features:
Cylindrical body with conical or flat bottom.
Hygienic welded connections and polyurethane or mineral wool insulation (for temperature control).
Mechanical agitator (for ayran homogenization).
Heating/cooling jacket or spiral coil system (for temperature control during fermentation and cooling).
Temperature Control:
Process control between 5°C and 45°C.
Automatic PLC or manual control systems.
Hygienic Components:
CIP (Clean-in-Place) system (nozzles and spray ball).
Air filter (to prevent contamination).
Tri-clamp valves and sensors.
Additional Equipment:
pH and temperature sensors.
Level indicator (ultrasonic or mechanical).

Filling: Pasteurized milk and starter culture are loaded into the tank.
Fermentation: Lactic acid bacteria are activated under controlled temperature (30-37°C).
Mixing: A mechanical agitator ensures a homogeneous consistency.
Cooling: The ayran is rapidly cooled (4-6°C) using a jacketed system.
Storage & Discharge: The product is sent to the packaging line while maintaining the cold chain.
